VEGAN COCONUT CURRY MAC N CHEESE
This is an easy recipe to follow and especially good for when you are craving creamy things like cheese but are trying to avoid dairy products! It’s so delicious and creamy. Also you can choose to not do the sautéed onions, but I love them so I added them in. Always try to buy organic, local and or high quality– this always improves the taste of any recipe, as well as the health of it!
INGREDIENT LIST
VEGAN COCONUT CURRY MAC N CHEESE
- VEGGIE SOUP (1-2 cups)
leftover vegetable soup, clear broth preferably. For this recipe I used leftover vegetable Pho broth from
lunch (I had about 2 cups leftover) made a veggie soup by boiling carrots, potatoes, onions, celery and
garlic and adding a little bit (1/2 cup or less) of brown rice.
- COOKED SWEET POTATO
- RED CURRY PASTE (1 tablespoon)
- GINGER PASTE (1/2 - 1 tablespoon) or FRESH GINGER grated or chopped finely
- HOT PASTE (example: Aroma One Carolina Reaper Creamy Hot Paste) (1/2 -1 tablespoon) will make spicier!
- COCONUT MILK (1/2- 1 cup) ... more = creamier
- CURRY SEASONING OR TUMERIC SEASONING (1 teaspoon)
- CUMIN SEASONING (1 teaspoon)
- CAYENNE SEASONING (1/2 teaspoon) ... or more to taste, this makes it spicier!
- CILANTRO, FRESH (1/2 - 1 cup)
- WHITE ONION (1/4 - 1/2 regular sized onion) Chopped to preference
- GLUTEN FREE VIETNAMESE BROWN RICE NOODLES WITH SEAWEED, one box at least! SO GOOD***
DIRECTIONS
STEP ONE
Combine all items ( except onion and Vietnamese noodles) into vitamix for 6 minutes. Start at low setting and slowly crank up to the highest setting for 1 minute then let blend for an additional 5 minutes! Warning: this will get steamy and hot!
STEP TWO
Sautee onions on medium heat until tender
STEP THREE
Boil 2 cups of water and add gluten free vietnamese brown rice noodles to water for 1 minute. Strain water from pan and combine with sauteed onions and your soup mixture!
